Can only try to give you an answer without actually seeing the situation..
As far as the fleas infestation goes, there are four stages of the flea life cycle...one of the stages they are in a cocoon and in this stage there can be more fleas waiting to emerge than the fleas you are being bothered by originally..usually takes around two weeks for them to emerge. Hopefully the exterminator used a product with a residual and an insect grow the regulator in it. These type of products will kill the exposed fleas, the eggs and keep the larvae from developing into the biting adult, but it will not kill the ones in the cocoon, you pretty much have to wait them out. Body heat and vibration helps to stimulate the ones ready to emerge to go ahead and emerge, it's why you need to vacuum until you are sick of your vacuum cleaner for a couple of weeks. The sooner they emerge the sooner they will get into the residual and die, get on the pet and either die or get groomed off, or jump on you which will be a quick death to it (more than likely). When I do a flea treatment, if I get a call back it is usually 5-7 days after the initial treatment, though more times than not no additional treatment is required.
As far as the couch, some furniture materials (leather, plastic )can be damaged by different products, though he should have at his disposal different things to use which should include products to use on and around sensitive areas and even then, usually the top of a chair or couch cushion isn't what needs to be treated, but under the cushion which could be treated with just about anything.
Check your receipt and see if it says anything about no warranty, if it doesn't call him back and inform him you expect him to warrant the problem until they are gone (as long as you are doing your part to help, vacuuming, treating pets, etc) or you will get the state involved and chances are he will be back.
I use / have used Diatomaceous Earth for over 23 years..though it can help in the long run it will not get rid of an existing flea infestation in a short period of time.
EDIT: Tom, I looked at the link you posted and they do not use DE in their product , but rather a borate...probably boric acid but could me borax and these products are toxic, more toxic than anything I have on my truck for pest control and these also will be a slower approach to flea control.
